Cajun Shrimp and Sausage Bake
Hello! We are back with a recipe that is in a word INCREDIBLE! This Cajun Shrimp and Sausage Bake is delicious, nutritious, few ingredients, easy to prep, quick to cook, and super easy clean up!
You begin by preheating your oven to 400 degrees F. Next, line 2 large baking pans with aluminum foil.
Cajun Shrimp and Sausage Bake ingredients:
- 1 pound small shrimp peeled and deveined
- 14 ounce pork or chicken sausage sliced
- 1 container of mushrooms (sliced or button)
- 2 medium-sized zucchini sliced
- 2 medium-sized yellow squash sliced
- 1 bunch asparagus
- 1 medium onion
- 2 bell pepper chopped into chunks
- 2 Tablespoons avocado oil
- 2 Tablespoons cajun seasoning (Weber N’Orleans Cajun seasoning)
You are going to need a really big bowl for this Cajun Shrimp and Sausage Bake! I got my Tupperware That’s a Bowl out! It is a bowl that I have had for several years and use it for so many things and it is perfect for mixing this meal making sure all ingredients are seasoned. You just put all the veggies in the bowl, add the sausage slices and your avocado oil.
I didn’t measure the amount I used (sorry about that) I just poured in a bit and put the lid on the bowl and toss the ingredients around to coat. If i was to guess I would say 1/4 – 1/2 cup of oil. You want your cajun seasoning to stick. Add your shrimp and 2 Tbsps of cajun seasoning, more if you like the heat. (I used 3!)
Once your Cajun Shrimp and Sausage Bake is seasoned, put on the baking pans in an even layer. Bake at 400 degrees F for 20-25 minutes.
I swapped the pans on the racks after about 15 minutes.
Cajun Shrimp and Sausage Bake can be eaten alone and it is delicious. However, you can serve it over rice or as my coworker thought it would be good over and alfredo pasta and I would really like to try this!!
