                                                                                 BRUNSWICK STEW
 This is a bit of a story about how stubborn my wife can be…
We went to Smokey Bones Restaurant for dinner one night and she ordered the stew with cornbread.  It was so good that she asked for the recipe (she is not shy about asking for recipes). They said they couldn’t give it to her.  This was the challenge that she needed.  She began the process of recreating what she had ordered and believe me it was a try and try and try again process.  We had to go back a couple of times for “retastings” to get it just right, or as close as possible and maybe BETTER!  
 
This is a HUGE amount of food it is great to take to a fall party to share with friends!  Enjoy!

Step 1: take a whole chicken (about 3 lbs) and put in a stock pot with 6 cups of water, boil for about 30 min – an hour until cooked through.  You could also use a rotisserie chicken and that would be a huge time saver but you will need to have chicken broth purchased as well because we use the water that you are cooking the chicken in.

Step 2: dice up 1.5 lbs of onion (she prefers sweet or yellow onion)

Step 3: put the onions in a large skillet with a pat of butter 
Step 4: put 2/3 lb of ground beef in the skillet with the onion and salt & pepper, cook until the onions are translucent and beef is cooked through.

Step 5: gather the other ingredients as follows:  
 
1 container of smoked pulled pork (I get the bbq one)
1-28oz can crushed tomatoes
1-28oz can diced tomatoes
2-15oz can of cream-style corn
1 sm bag frozen corn
3/4 c ketchup
1 tbsp mustard
3/4 tsp hot sauce (more if you like)
1 tsp black pepper
1/4 c barbecue spice (this is not sauce) 
1/4 c Worcestershire sauce
1 1/2 tsp salt
2 Tbsp sugar

By this time your chicken should be ready to pick off bone and shred.  Reserve the stock as you will need it as well.  If you purchased a rotisserie chicken you will need about 4-6 cups of broth depending how thick you like your stew!  As with any recipe… substitute what you and your family like or dislike… cooking is a personal adventure and one that should be shared, embraced and enjoyed!

Get a LARGE stock pot add the shredded chicken, chicken stock, beef/onion mixture, pork and all the other Brunswick Stew ingredients.

Add these as needed to suit your taste!!

Brunswick Stew

 Stir as you add.  Cook on low for about an hour to hour and a half.  This Brunswick Stew is great served with hot buttered cornbread!
