Cabbage Roll Soup
Winter time is a time for soup. It is warm, comforting and delicious! We like the standards like chicken noodle, chili, vegetable beef, etc. But also like to try new recipes such as this one… Cabbage Roll Soup!
Cabbage Roll Soup Ingredients:
1 lb lean ground beef (you could use ground turkey, chicken or sausage)
1 medium onion diced
3-4 cloves of garlic (minced)
4 cups of chopped green cabbage
2 medium carrots (quartered & sliced)
4 cups of beef broth
1 – 29 oz can of tomato sauce
1/2 cup white rice (uncooked)
1 bay leaf
3 tbsp light brown sugar
Step 1 – in a dutch oven or large soup pot, over medium-high heat brown ground beef seasoning with salt & pepper,
Step 2 – add diced onion and minced garlic and continue cooking for 2-3 minutes, until onions are tender.
Step 3 – add in chopped cabbage, carrots, tomato sauce, beef broth, white rice, bay leaf, and brown sugar and stir to combine. Bring your cabbage roll soup to a simmer, cover and cook for about 25 minutes, until rice is tender.
Remove bay leaf and serve the cabbage roll soup with sweet cornbread. We love Jiffy Mix Cornbread! Enjoy!
